Ingredients

16 large portobello mushrooms, stems carefully removed

1 cup cream cheese, softened to room temperature

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup Italian-style breadcrumbs

Olive oil spray

Instructions

Prep the Mushrooms: Start by gently cleaning the portobello mushrooms with a damp paper towel to eliminate any dirt. Afterward, carefully remove the stems and use a small spoon to hollow out the insides a bit, making room for the delicious stuffing.

Make the Filling: In a medium-sized mixing bowl, combine the softened cream cheese, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, chopped parsley, onion powder, smoked paprika, salt, and black pepper. Stir it all together until the mixture is smooth and all ingredients are well blended, creating a creamy filling.

Stuff the Mushrooms: Use a spoon or a piping bag to generously fill each portobello mushroom cap with the cheese mixture. Ensure each cap is packed well and that the filling is heaping above the top of the mushroom for maximum flavor.

Prepare for Air Frying: Place the stuffed mushrooms on a large plate or cutting board. Evenly sprinkle the Italian-style breadcrumbs over the top of each stuffed mushroom to create a crispy layer. Lightly spray the breadcrumb topping with olive oil for an extra crunchy finish when cooking.

Air Fry the Mushrooms: Preheat your air fryer to 375°F (190°C). Arrange the stuffed mushrooms in a single layer in the air fryer basket, making sure there is enough space in between each mushroom for optimal cooking. You may need to cook them in batches depending on the size of your air fryer.

Cook: Air fry the stuffed mushrooms for 10-12 minutes. You’ll know they’re ready when the breadcrumbs turn a beautiful golden brown and the mushrooms are tender. For an even golden surface, consider flipping them halfway through the cooking time.

Serve: Carefully remove the Mushroom Magic Bombs from the air fryer once they are cooked. Allow them to cool for a minute or two before serving. Present them warm as a delightful appetizer or snack, garnished with extra chopped parsley for a fresh touch.
