Ingredients

1 medium zucchini, grated and excess moisture squeezed out

1 pound ground turkey

1/2 cup grated Parmesan cheese

1 large egg

1 cup breadcrumbs (whole wheat or gluten-free preferred)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Cooking spray or olive oil for greasing

Optional: Marinara sauce for dipping

Instructions

Prepare the Zucchini: Begin by grating the zucchini using a box grater. Transfer the grated zucchini to a clean kitchen towel or cheesecloth. Gather the edges and wring out as much moisture as possible. Removing excess moisture is essential to ensure the poppers achieve a crispy texture.

Mix the Ingredients: In a large mixing bowl, combine the ground turkey, grated zucchini, Parmesan cheese, egg, breadcrumbs, garlic powder, onion powder, Italian seasoning, and a generous pinch of salt and pepper. Use your hands or a spoon to mix the ingredients thoroughly until they are evenly combined.

Form the Poppers: With clean hands, scoop out about a tablespoon of the mixture and roll it into small, bite-sized balls or shape them into patties. Arrange the shaped poppers on a plate lined with parchment paper to prevent sticking.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 3-5 minutes. This step helps to ensure even cooking.

Spray & Arrange the Poppers: Lightly coat the air fryer basket with cooking spray or drizzle it with olive oil. Carefully place the turkey zucchini poppers in a single layer in the basket, ensuring they do not touch each other. Depending on the size of your air fryer, you may need to cook them in batches.

Cook the Poppers: Air fry the poppers at 400°F (200°C) for 10-12 minutes. Remember to flip them halfway through the cooking time to achieve an even golden brown color. They are done when they are golden on the outside and have reached an internal temperature of 165°F (74°C).

Serve: Once cooked, carefully remove the poppers from the air fryer and allow them to cool for a few minutes. Serve them warm alongside marinara sauce for dipping, if desired.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: Approximately 4-6 servings

                  - Presentation Tips: Arrange the poppers on a vibrant platter and drizzle with a little olive oil or sprinkle with fresh herbs for a pop of color. Serve with a bowl of marinara sauce in the center for an inviting and appetizing look.
