4 large flour tortillas

1 cup shredded cheese (your choice of cheddar, mozzarella, or a delicious blend)

1 cup bell peppers, thinly sliced (a mix of red, yellow, and green for color)

1 cup zucchini, finely chopped

1 small red onion, thinly sliced

1 cup fresh spinach leaves (or thawed if using frozen)

1 teaspoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Salsa and sour cream for serving (optional)

Instructions
 

Prepare the Filling:

    In a large mixing bowl, combine the sliced bell peppers, chopped zucchini, thinly sliced red onion, and spinach leaves. Drizzle the mixture with olive oil. Add the garlic powder, ground cumin, smoked paprika, and a pinch of salt and pepper. Toss everything together until the vegetables are evenly coated in the seasonings and oil.

      Assemble the Quesadillas:

        Place one flour tortilla on a clean, flat surface. Evenly sprinkle half of the shredded cheese over one side of the tortilla. Generously layer a portion of the prepared veggie mixture over the cheese, then top with an additional layer of cheese. Fold the tortilla in half to create a semi-circle shape, pressing gently to seal.

          Repeat the Assembly:

            Follow the same steps for the remaining tortillas, creating a total of 4 quesadillas.

              Preheat the Air Fryer:
