Ingredients

For the Dough:

4 cups all-purpose flour

1/4 cup granulated sugar

1 packet (2 1/4 tsp) active dry yeast

1/2 tsp salt

1 cup milk, warmed to 110°F (43°C)

1/4 cup unsalted butter, melted

2 large eggs, at room temperature

For the Filling:

1/2 cup unsalted butter, softened to room temperature

1 cup brown sugar, packed

2 tbsp ground cinnamon

1 tbsp ground cardamom

1/4 tsp ground nutmeg (optional)

1/4 tsp salt

For the Glaze:

1 cup powdered sugar

2-3 tbsp milk

1/2 tsp vanilla extract

A sprinkle of ground cardamom for garnish

Instructions

Prepare the Dough:

    - In a large mixing bowl, combine the warm milk, granulated sugar, and active dry yeast. Stir gently, then let it rest for about 5-7 minutes until it becomes frothy, indicating that the yeast is active.

      - Add the melted butter and eggs to the yeast mixture, mixing thoroughly until well combined.

        - Gradually incorporate the flour and salt, stirring until a dough begins to form. Transfer the mixture to a lightly floured surface and knead the dough for about 5-7 minutes, until it reaches a smooth and elastic texture.

          Let the Dough Rise:

            - Grease the inside of a large bowl and place the kneaded dough inside. Cover the bowl with a kitchen towel or plastic wrap, and set it in a warm environment to rise for about 1-1.5 hours, or until the dough has doubled in size.

              Prepare the Filling:

                - While the dough is rising, in a medium bowl, combine the softened butter, packed brown sugar, ground cinnamon, ground cardamom, nutmeg (if you are using it), and salt. Mix until the filling is well blended and creamy.

                  Assemble the Rolls:

                    - Once the dough has risen, gently punch it down to release the air. Roll the dough out on a floured surface into a rectangle measuring approximately 16x12 inches.

                      - Evenly spread the prepared filling over the entire surface of the dough, making sure to leave a small border around the edges.

                        - Starting from one of the longer edges, tightly roll the dough into a log shape, ensuring the filling stays inside.

                          Cut the Rolls:

                            - Using a sharp knife or a piece of unflavored dental floss, slice the rolled dough into 12 equal pieces, each approximately 1 to 1.5 inches thick. Place these rolls cut-side up in a greased 9x13 inch baking dish, ensuring a bit of space between each roll.

                              Second Rise:

                                - Cover the baking dish with a kitchen towel and let the rolls rise again in a warm environment for about 30-45 minutes, or until they have puffed up noticeably.

                                  Bake:

                                    - Preheat your oven to 350°F (175°C). Bake the rolls in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through.

                                      Prepare the Glaze:

                                        - In a small mixing bowl, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract until you achieve a smooth consistency. If the glaze is too thick, add more milk, a teaspoon at a time, until it's pourable.

                                          Glaze the Rolls:

                                            - Once the rolls are out of the oven, allow them to cool for about 5-10 minutes before generously drizzling the glaze over the tops. For an aromatic touch, sprinkle a little ground cardamom on top as a delightful garnish.

                                              Serve and Enjoy:

                                                - Serve these warm, fresh rolls to your family and friends, and savor the delightful harmony of cinnamon and cardamom in every fluffy, sweet bite!
