2 cups elbow macaroni

4 slices of bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

2 cups shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

Cooking spray or additional butter for greasing

Cook the Pasta: Begin by bringing a large pot of salted water to a vigorous boil. Add the elbow macaroni and cook according to the package instructions until al dente (usually about 7-8 minutes). Once cooked, drain the pasta in a colander and set it aside.

    Cook the Bacon: In a medium skillet, heat over medium heat and add the chopped bacon. Cook until the bacon pieces are crispy, approximately 4-5 minutes. Once done, use a slotted spoon to transfer the bacon to a plate lined with paper towels to absorb excess grease. Reserve about 1 tablespoon of the bacon fat in the skillet.

      Make the Cheese Sauce: In the same skillet with the reserved bacon grease, lower the heat slightly and add the butter. Allow it to melt completely. Once melted, sprinkle in the flour, whisking continuously for about 1 minute to create a roux. Gradually pour in the milk, whisking as you go. Continue to stir until the mixture thickens, which should take around 5 minutes.

        Incorporate the Cheese: Once thickened, remove the skillet from the heat. Stir in the shredded cheddar cheese and grated Parmesan until both cheeses are fully melted and the sauce is creamy. Mix in the garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper to taste.

          Combine Pasta and Bacon: Add the drained macaroni and the crispy bacon pieces to the cheese sauce. Stir well to ensure every bit of pasta is generously coated in that delicious cheese mixture.

            Form the Bites: Preheat your oven to 375°F (190°C). Grease a mini muffin tin using cooking spray or a little butter. Using a tablespoon, scoop the mac and cheese mixture and fill each muffin cup, pressing down gently to pack the mixture tightly.

              Coating the Bites: Pour the panko breadcrumbs into a shallow bowl. Gently roll each filled muffin cup in the breadcrumbs or spoon some on top of the mixture to ensure each bite has a delightful crunchy layer.

                Bake: Place the prepared muffin tin in your preheated oven. Bake for 15-20 minutes, or until the tops are golden brown and crispy.

                  Cool and Serve: Once baked, allow the bites to cool in the tin for about 5 minutes. Carefully remove them using a fork or a knife and serve warm. These bites pair wonderfully with a side of ranch dressing or your favorite dipping sauce.
