Ingredients

For the Bacon-Wrapped Chicken:

4 boneless, skinless chicken breasts

8 slices of thick-cut bacon

1 cup shredded mozzarella cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh thyme leaves (for garnish)

For the Balsamic Squash:

2 medium zucchinis, sliced into half-moons

2 medium yellow squash, sliced into half-moons

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon honey (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it's hot and ready for baking.

Prepare the Chicken: In a mixing bowl, combine the garlic powder, smoked paprika, salt, and pepper. Take the chicken breasts and season them evenly on both sides with this flavorful spice mixture.

Stuff the Chicken: On each chicken breast, place ¼ cup of shredded mozzarella cheese. Tightly roll up each breast, making sure the cheese is secure inside. Take two slices of bacon and wrap them around each chicken roll, tucking the ends underneath. If needed, use toothpicks to secure the bacon in place.

Sear the Chicken: Heat a splash of olive oil in a large skillet over medium-high heat. Once hot, carefully add the bacon-wrapped chicken and sear them on all sides until the bacon is crispy and beautifully browned (approximately 3-4 minutes per side).

Bake the Chicken: Transfer the seared chicken rolls to a baking dish and place them in the preheated oven. Bake for 20-25 minutes until the internal temperature of the chicken reaches 165°F (75°C) and the bacon is well-cooked.

Prepare the Balsamic Squash: While the chicken is baking, take a mixing bowl and add the sliced zucchinis and yellow squash. Drizzle with olive oil, balsamic vinegar, and sprinkle with dried oregano, salt, and pepper. If desired, add honey for a touch of sweetness, then toss until the squash is evenly coated.

Roast the Squash: Spread the seasoned zucchini and yellow squash mixture onto a baking sheet lined with parchment paper. Roast in the oven (you can do this simultaneously with the chicken) for about 15-20 minutes, or until the squash is tender and slightly caramelized, stirring them halfway through for even cooking.

Serve: Once the chicken is finished baking, allow it to rest for a few minutes before slicing to keep it juicy. Plate the chicken alongside the delicious balsamic squash, and finish with a sprinkle of fresh thyme leaves for an aromatic touch.

Enjoy this savory dish that harmonizes the smokiness of the bacon, the juicy tenderness of the chicken, and the sweet tang of the balsamic squash!
