Ingredients

12 large pasta shells

1 cup fresh spinach, finely chopped

1 cup feta cheese, crumbled

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional for a spicy kick)

1/2 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Cook the Pasta Shells: In a large pot, bring salted water to a boil. Carefully add the large pasta shells and cook them according to the package instructions until they are al dente. Once done, drain the shells and set them aside to cool slightly to prevent burns.

Prepare the Filling: In a mixing bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, grated Parmesan cheese, minced garlic, red pepper flakes (if using for spice), dried oregano, and a pinch of salt and pepper. Stir the mixture until well blended and creamy.

Stuff the Shells: Gently stuff each cooked pasta shell with a generous spoonful of the feta and spinach filling, ensuring they are filled to just before overflowing.

Prepare the Baking Dish: Pour 1 cup of marinara sauce onto the bottom of a 9x13 inch baking dish, spreading it evenly. Arrange the stuffed shells upright in a single layer over the sauce. After arranging, pour the remaining marinara sauce evenly over the top of the stuffed shells. Finish by drizzling with olive oil to enhance flavor.

Bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes, or until the sauce is bubbling and the tops of the shells are slightly golden brown.

Garnish and Serve: Once baked, take the dish out of the oven and let it rest for a few minutes to set. Just before serving, garnish with fresh basil leaves for an aromatic touch.
