Ingredients

6 slices of day-old French bread, cut into 1-inch cubes

2 medium-sized apples, peeled, cored, and diced

3 large eggs

1 cup whole milk

½ cup granulated sugar

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ cup maple syrup (plus extra for serving)

¼ cup unsalted butter, melted

½ cup chopped walnuts or pecans (optional)

A pinch of salt

Confectioners' sugar, for dusting (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a standard muffin tin by greasing it with non-stick cooking spray or lining it with muffin liners to ensure easy removal.

Prepare the Muffin Batter: In a large mixing bowl, crack the eggs and add the whole milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg, melted butter, and a pinch of salt. Whisk all the ingredients together until the mixture is smooth and well combined.

Add Bread and Apples: Gently fold in the 1-inch bread cubes and diced apples into the egg mixture. Allow this mixture to sit for about 10-15 minutes to ensure that the bread thoroughly absorbs the liquid and softens.

Distribute the Mixture: Using a spoon or scoop, evenly distribute the soaked mixture into the prepared muffin tin, filling each muffin cup about ¾ of the way full. Make sure each cup receives a good amount of both bread and apple for the best flavor.

Optional Add-ins: If you're looking to add a delightful crunch, sprinkle the chopped walnuts or pecans on top of each muffin before baking.

Bake: Place the filled muffin tin into the preheated oven and bake for 20-25 minutes. You'll know they are done when the tops turn golden brown and a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes. After cooling, carefully transfer them to a wire rack. For an added touch of sweetness, dust with confectioners' sugar if desired. Serve warm, drizzled generously with maple syrup.
