4 boneless, skinless chicken breasts

1 cup fresh basil pesto (store-bought or homemade)

1 cup fresh mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the right temperature for baking.

    Prepare the Chicken: Take the chicken breasts and use a paper towel to pat them dry. Season both sides generously with salt and freshly ground black pepper to enhance the flavor.

      Sear the Chicken (optional): If you prefer a crispy outer layer, heat the olive oil in a large oven-safe skillet over medium heat. Once hot, carefully add the chicken breasts and sear them for about 3-4 minutes on each side, until they achieve a lovely golden brown color. If you don’t have an oven-safe skillet, you can simply skip this step and place the raw chicken directly in a baking dish.

        Add Pesto: Take the fresh basil pesto and spread a generous layer over each chicken breast, making sure they are well coated and every bite is infused with flavor.

          Add Cheeses and Tomatoes: Sprinkle the shredded mozzarella cheese and grated Parmesan cheese generously over each breast. Then, arrange the halved cherry tomatoes around the chicken, tucking them in between for added flavor and color.
