Balsamic Strawberry Chicken

2 boneless, skinless chicken breasts

Salt and freshly ground pepper, to taste

2 tablespoons extra virgin olive oil

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

2 tablespoons honey

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon garlic, minced

1/4 cup crumbled feta cheese (optional, for added richness)

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Chicken: Season both sides of the chicken breasts evenly with salt and freshly ground pepper for enhanced flavor.

    Sear the Chicken: Heat the extra virgin olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts. Sear for about 5-6 minutes on each side, or until they achieve a golden brown crust and are fully cooked through (internal temperature should reach 165°F). Once done, remove the chicken from the skillet and set aside on a plate.

      Make the Balsamic Sauce: In the same skillet, without cleaning it, add the sliced strawberries along with the balsamic vinegar, honey, thyme leaves, and minced garlic. Gently cook the mixture for about 3-4 minutes, stirring carefully to prevent the strawberries from breaking apart. The sauce should become slightly thicker as it cooks.

        Combine Chicken and Sauce: Carefully return the seared chicken breasts back to the skillet. Spoon the luscious balsamic-strawberry sauce generously over the chicken. Reduce the heat to low and simmer for an additional 2 minutes, allowing the chicken to absorb some of the delightful flavors of the sauce.
