4 medium zucchinis

2 cups cooked chicken, shredded (rotisserie chicken works excellently)

1/2 cup Buffalo sauce (adjust to your desired spice level)

1/2 cup cream cheese, softened to room temperature

1/2 cup shredded cheddar cheese, plus extra for topping

1/4 cup crumbled blue cheese (optional for extra flavor)

2 green onions, finely chopped

Salt and freshly ground black pepper, to taste

Olive oil, for drizzling

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) to ensure it is ready for baking.

    Prepare the Zucchini: Rinse the zucchinis under cold water and slice them in half lengthwise. Using a spoon, carefully scoop out the insides to create hollow boats, leaving about 1/4 inch of flesh around the edges for structural support. Reserve the scooped zucchini flesh for later use.

      Cook the Filling:

        - In a mixing bowl, combine the shredded chicken, Buffalo sauce, softened cream cheese, and half of the shredded cheddar cheese. If you enjoy blue cheese, fold it into the mixture as well. Stir thoroughly until the ingredients are well mixed and the chicken is evenly coated in the sauce.

          - Dice the reserved zucchini flesh and gently incorporate it into the chicken mixture. Season with salt and freshly cracked black pepper to taste, ensuring a well-balanced flavor.
