Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

½ cup buffalo sauce (adjust to taste)

4 whole wheat pitas

1 cup shredded mozzarella cheese

½ cup ranch dressing

1 cup baby spinach or arugula

½ cup cherry tomatoes, halved

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish, optional)

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for roasting and baking.

Prepare the Chickpeas: In a medium mixing bowl, add the drained chickpeas along with olive oil, a sprinkle of salt, and pepper. Toss the chickpeas until they are well-coated. Then, pour half of the buffalo sauce over them and mix thoroughly.

Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet. Roast them in the preheated oven for approximately 20 minutes, stirring them halfway through. They should turn crispy and lightly golden.

Assemble the Pita Pizzas: While the chickpeas are roasting, arrange the whole wheat pitas on another baking sheet. Spoon a generous tablespoon of ranch dressing on each pita. Spread it evenly across the surface, then sprinkle shredded mozzarella cheese over the ranch.

Add the Chickpeas: Once the chickpeas are done roasting, take them out of the oven. Evenly distribute the crispy chickpeas over the cheese-covered pitas.

Drizzle with Buffalo Sauce: Drizzle any remaining buffalo sauce over the chickpeas, adjusting the amount based on your preferred spice level. Then, add another layer of shredded mozzarella cheese on top.

Bake: Place the assembled pita pizzas back in the oven and bake for an additional 10-12 minutes. Bake until the cheese is melted, bubbly, and the edges of the pitas are crispy and golden brown.

Garnish and Serve: Carefully remove the pizzas from the oven and let them cool for a minute. Top each pizza with fresh spinach or arugula, add the halved cherry tomatoes, and sprinkle with sliced green onions and parsley for an extra burst of flavor and presentation.

Cut and Enjoy: Using a sharp knife, slice the pita pizzas into wedges. Serve warm, with extra ranch dressing or buffalo sauce on the side for dipping, if you like a little extra kick.
