Ingredients

3 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 cup warm milk (110°F/43°C)

¼ cup granulated sugar

½ cup unsalted butter, melted (plus extra for brushing)

1 large egg

1 tsp salt

3 cloves garlic, minced

2 tbsp fresh parsley, finely chopped

1 tbsp fresh rosemary, finely chopped

1 tsp dried oregano

¼ tsp black pepper

Instructions

Activate the Yeast: In a small bowl, mix the warm milk and granulated sugar. Sprinkle the yeast over the top and allow it to sit undisturbed for approximately 5-10 minutes, or until it becomes frothy and bubbly.

Mix the Dough: In a large mixing bowl, combine the flour and salt with a whisk. Create a well in the center of the flour mixture and pour in the melted butter, beaten egg, and the activated yeast mixture. Stir gently until a shaggy dough begins to form.

Knead the Dough: Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes, until the dough is smooth and elastic. If the dough is too sticky, sprinkle in a bit more flour as needed.

First Rise: Shape the kneaded dough into a ball and place it in a greased bowl. Cover it with a damp cloth and let it rise in a warm area for about 1 hour, or until it has doubled in size.

Prepare Garlic Herb Butter: While the dough is rising, melt ¼ cup of butter in a small saucepan over medium-low heat. Once melted, add the minced garlic, finely chopped parsley, rosemary, dried oregano, and black pepper. Stir well to combine. Remove from heat and set aside to allow the flavors to meld.

Shape the Rolls: After the dough has risen, gently punch it down to release the air. Transfer it to a floured surface and divide it into 12 equal portions. Roll each piece into a smooth ball, ensuring they are uniform in size for even baking.

Second Rise: Arrange the shaped rolls in a greased 9x13-inch baking dish, leaving some space between each roll to allow for further rising. Cover with a cloth and let them rise again for about 30 minutes.

Preheat the Oven: While the rolls are rising, preheat your oven to 375°F (190°C), ensuring it’s fully heated before baking.

Brush with Herb Butter: Once the rolls have risen and are puffy, gently brush the tops with the warm garlic herb butter mixture using a pastry brush, ensuring they are well coated for flavor.

Bake: Place the baking dish in the preheated oven and bake for 18-22 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

Final Touch: As soon as the rolls come out of the oven, brush them with any remaining garlic herb butter for added flavor and gloss. Allow them to cool slightly in the dish before serving.
