Ingredients

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced

1 cup fresh basil leaves

1/2 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon Italian seasoning (optional)

1 teaspoon honey (optional, for sweetness)

Instructions

Prepare the Balsamic Glaze: In a small saucepan, combine the balsamic vinegar and honey (if using) over medium heat. Bring the mixture to a gentle simmer, then reduce the heat to low. Allow it to cook for about 10-15 minutes, stirring occasionally until it thickens and takes on a syrupy consistency. Once thickened, remove from heat and set aside to cool.

Preheat the Oven: Set your oven to preheat at 375°F (190°C), ensuring it's ready for baking the chicken.

Season the Chicken: Take the chicken breasts and pat them dry with paper towels. Season both sides liberally with salt, pepper, and Italian seasoning (if using), ensuring even distribution for maximum flavor.

Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts to the skillet. Sear for approximately 5-7 minutes on each side, or until they achieve a lovely golden-brown color. Avoid cooking them through at this stage; you want a beautiful crust developed on the outside.

Add Garlic and Tomatoes: Once the chicken is browned, add the minced garlic and halved cherry tomatoes around the chicken in the skillet. Gently toss the tomatoes to coat them in the oil and allow the garlic to cook for about 1 minute until fragrant.

Top with Cheese and Bake: Layer slices of fresh mozzarella cheese over each chicken breast. Carefully transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (reaching an internal temperature of 165°F/75°C) and the cheese is melted and bubbling.

Finish with Fresh Basil: Upon removing the skillet from the oven, immediately sprinkle the fresh basil leaves over the hot chicken, allowing them to wilt slightly. Drizzle the prepared balsamic glaze generously over each piece to enhance the dish's flavor.

Serve: Present the Caprese Chicken warm, accompanied by a side of crusty bread, roasted vegetables, or a fresh green salad to complement and balance the rich flavors of the dish.
