2 large onions (thinly sliced)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon sugar

Salt and freshly cracked pepper to taste

4 ounces goat cheese (crumbled)

1/2 cup crème fraîche (or sour cream)

Fresh thyme leaves (for garnish)

1 egg (beaten, for egg wash)

    Caramelize the Onions: In a large skillet over medium heat, warm the olive oil. Add the thinly sliced onions and sprinkle with salt and pepper. Cook, stirring occasionally, for about 15-20 minutes until the onions are beautifully caramelized and golden brown.

      Enhance the Flavor: Once the onions reach a rich, golden color, sprinkle in the sugar and drizzle the balsamic vinegar over them. Stir well to combine and continue cooking for an additional 3-5 minutes, allowing the vinegar to reduce slightly. Remove from heat and let cool for a few minutes.
