3 large onions (thinly sliced)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

1 teaspoon balsamic vinegar

1 cup grated Gruyère cheese

1/2 cup heavy cream

2 large eggs

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot and ready for baking.

    Prepare the Caramelized Onions: In a large skillet set over medium heat, melt the butter and olive oil together. When the mixture is hot, add the thinly sliced onions. Sauté the onions for about 10 minutes, stirring occasionally, until they begin to soften and turn translucent.

      Caramelization Process: Once the onions are soft, sprinkle the sugar over them. Reduce the heat to low and continue to cook for 20-25 minutes, stirring frequently. You want the onions to develop a rich golden-brown color and a sweet, caramelized flavor. Towards the end of cooking, stir in the balsamic vinegar and season with salt and pepper to taste. Remove the skillet from the heat and allow the mixture to cool slightly.

        Roll Out the Puff Pastry: While the onions are cooling, lightly flour a clean workspace and roll out the puff pastry to fit a 9-inch tart pan. Carefully press the pastry into the pan and trim any excess edges. Use a fork to prick holes in the bottom of the pastry to prevent puffing during baking.

          Assemble the Tart Filling: In a mixing bowl, combine the heavy cream, eggs, thyme, and a pinch of salt and pepper. Whisk until smooth.
