4 bone-in, skin-on chicken thighs

1 cup jasmine rice

1 can (14 oz) coconut milk

1 cup chicken broth

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp ground allspice

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tsp dried thyme

1 lime, juiced (plus lime wedges for serving)

2 tbsp vegetable oil

Salt and pepper, to taste

2 scallions, chopped (for garnish)

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the chicken thighs with lime juice, salt, pepper, paprika, allspice, and cayenne pepper. Ensure the chicken is evenly coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours. This step is essential for infusing the chicken with robust flavors.

    Sauté the Vegetables: In a large, deep skillet or pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté them for approximately 3-4 minutes, or until the onions turn translucent and fragrant.

      Add Peppers: Introduce the diced red and green bell peppers to the skillet. Continue to sauté for another 3-5 minutes until the peppers begin to soften, stirring occasionally to ensure even cooking.

        Brown the Chicken: Push the sautéed vegetables to the side of the pan to create space. Place the marinated chicken thighs into the skillet, skin-side down. After resting, carefully remove the chicken thighs and fluff the rice using a fork to separate the grains.
