Ingredients

1 cup cream cheese, softened to room temperature

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/2 cup brown sugar, packed tightly

1 large egg, at room temperature

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon fine sea salt

1 cup white chocolate chips

1/2 cup crushed graham crackers (for that cheesecake crust flavor)

Optional: powdered sugar for a dusting finish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking.

Prepare the Cream Mixture: In a large mixing bowl, combine the softened cream cheese and unsalted butter. Using an electric mixer, beat on medium speed until the mixture is perfectly smooth and creamy, about 2-3 minutes.

Add the Sugars: Gradually sprinkle in the granulated sugar and brown sugar. Continue to beat the mixture until it becomes fluffy and light in color, which should take about another 2 minutes.

Incorporate the Egg and Vanilla: Crack the egg into the bowl and add the pure vanilla extract. Mix on low speed until everything is blended well, making sure no lumps remain.

Combine the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and sea salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed just until combined to avoid over-mixing.

Fold in the Extras: Carefully fold in the white chocolate chips and the crushed graham crackers using a spatula or wooden spoon. Ensure they are evenly mixed throughout the dough without overworking it.

Scoop the Cookies: Use a tablespoon or cookie scoop to form rounded balls of dough. Place them onto the prepared baking sheets, leaving about 2 inches of space between each ball to allow for spreading.

Bake: Place the baking sheets into the preheated oven and bake for 10-12 minutes. The edges should be lightly golden, while the centers will appear slightly underbaked, as they will continue to set once they cool.

Cool Down: After baking, remove the baking sheets from the oven. Let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Optional Dusting: Once the cookies have cooled completely, lightly dust them with powdered sugar for a visually appealing and sweet finish.

Prep Time: 15 min | Total Time: 30 min | Yield: About 24 cookies

Presentation Tips: Serve these delightful cookie treats on a decorative platter. For an extra flourish, consider placing them on a bed of crushed graham crackers and garnishing with fresh berries for a pop of color and freshness. Enjoy your baking!
