In a large mixing bowl, mash the drained white beans using a fork or potato masher until mostly smooth, leaving some chunks for texture.
Add in the shredded cheddar cheese, breadcrumbs, green onions, Parmesan cheese, minced garlic, onion powder, smoked paprika, salt, pepper, and the beaten egg. Mix until all ingredients are well incorporated. The mixture should be sticky but moldable.
Take a portion of the bean mixture (about 0.125 cup) and shape it into a log, approximately 3 inches long and 1 inch wide. Repeat this process until all the mixture is used, placing the formed logs on a plate.
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Spray the basket of the air fryer with cooking spray. Place the logs in the basket, making sure to leave space between them for even cooking.
Air fry the logs for 10-12 minutes or until they are golden brown and crispy on the outside. Flip the logs halfway through cooking for even crispiness.
Once cooked, carefully remove the logs from the air fryer and let them cool for a minute. Serve warm with your favorite dipping sauce.
