1 packet (1 oz) taco seasoning

1/2 cup corn (can be frozen or canned)

1 cup shredded cheddar cheese (plus extra for topping)

Salt and pepper, to taste

For the Enchilada Sauce:

2 cups red enchilada sauce (store-bought or homemade)

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp chili powder

For Assembly:

8-10 corn or flour tortillas

1 cup diced tomatoes (optional, for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Prepare the Filling:

    - In a large skillet over medium heat, add the ground beef. Cook while breaking it up with a spatula until it is well browned, approximately 5-7 minutes.

      - Once browned, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, roughly 3-4 minutes.

        - Stir in the drained black beans, corn, taco seasoning, and a pinch of salt and pepper. Mix well and cook for an additional 2-3 minutes, then remove from heat.

          - Incorporate 1 cup of the shredded cheddar cheese into the beef mixture until it is evenly combined.

            Make the Enchilada Sauce:

              - In a medium saucepan, combine the red enchilada sauce, cumin, smoked paprika, and chili powder. Bring the mixture to a gentle simmer over medium heat, stirring occasionally. Allow it to simmer for about 5 minutes, and then remove it from the heat.

                Assemble the Enchiladas:

                  - Preheat your oven to 375°F (190°C).

                    - Spread 1 cup of the enchilada sauce along the bottom of a 9x13-inch baking dish.
