Ingredients

1 cup quinoa, thoroughly rinsed

2 cups beef broth (or water if preferred)

1 lb ground beef (or ground turkey for a lighter option)

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

2 green onions, finely sliced (for garnish)

Optional: 1 tablespoon soy sauce or tamari for an additional burst of flavor

Instructions

Cook the Quinoa: In a medium-sized saucepan, combine the rinsed quinoa with beef broth or water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer gently for about 15 minutes, or until the quinoa is fluffy and the liquid is completely absorbed. Once done, remove from the heat and set aside.

Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the ground beef along with the garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Cook the beef for approximately 5-7 minutes, breaking it up with a spatula as it cooks, until it is browned and fully cooked through.

Add the Broccoli: When the beef is fully cooked, incorporate the broccoli florets into the skillet. If using fresh broccoli, sauté for an additional 5-7 minutes until the florets are tender-crisp. If using frozen broccoli, simply cook until heated through, which should only take a few minutes.

Combine Ingredients: Gently fold the cooked quinoa into the beef and broccoli mixture, stirring to combine everything evenly. If you are using soy sauce for added flavor, drizzle it in at this point and mix well.

Cheesy Finish: Lower the heat to medium-low and sprinkle the shredded cheddar cheese evenly over the mixture. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese has melted beautifully.

Serve: Carefully remove the skillet from the heat. Garnish the dish with finely sliced green onions for a fresh touch. Serve the cheesy beef and broccoli quinoa bowl warm in individual bowls and savor every bite!
