4 large bell peppers (choose any color you like)

6 large eggs

1 cup fresh spinach, coarsely chopped

1 cup shredded cheddar cheese, divided

1/2 cup diced tomatoes (fresh or canned)

1/4 cup finely diced onion

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and black pepper, to taste

Olive oil, for sautéing

Fresh herbs (like parsley or chives) for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Carefully slice the tops off each bell pepper and remove the seeds and membranes from within. Lightly coat the outside of the peppers with olive oil, ensuring an even distribution. Stand them upright in a baking dish for support.

      Sauté the Vegetables: In a medium skillet over medium heat, add a splash of olive oil. Once warmed, add the diced onion and sauté for about 2-3 minutes until it becomes translucent. Then, incorporate the chopped spinach and cook until it's wilted, approximately 2 additional minutes. Remove the skillet from heat once done.

        Mix the Egg Filling: In a large mixing bowl, crack open the eggs and whisk them thoroughly. Add in the garlic powder, smoked paprika, salt, and pepper, mixing well to combine. Then, gently fold in the sautéed spinach mixture along with the diced tomatoes. Finally, add half of the shredded cheddar cheese, mixing to ensure an even distribution.

          Fill the Bell Peppers: Pour the prepared egg and spinach mixture carefully into each bell pepper, filling them about three-quarters full. This allows space for the eggs to expand while they bake.

            Add Cheese on Top: Evenly sprinkle the remaining shredded cheddar cheese over the top of each pepper for a cheesy finish.
