Cheesy Spinach Stuffed Pasta Shells

20 large jumbo pasta shells

2 cups fresh spinach, finely chopped

15 oz ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

3 cups marinara sauce (homemade or prepared)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta Shells: In a large pot, bring salted water to a rolling boil. Carefully add the jumbo pasta shells and cook according to the package instructions, typically 10-12 minutes, until they are al dente. Once cooked, drain the shells and rinse them under cold water to stop the cooking process and prevent sticking. Set aside.

    Prepare the Filling: In a spacious mixing bowl, combine the chopped spinach with the ricotta cheese, 1 cup of the shredded mozzarella, grated Parmesan cheese, egg, garlic powder, onion powder, and a pinch of salt and pepper. Mix everything together until the mixture is smooth and homogenous.

      Preheat the Oven: Set your oven to preheat at 375°F (190°C) while you prepare the rest of the dish.

        Stuff the Shells: Take each cooked pasta shell and generously fill it with the spinach and cheese mixture. Arrange the filled shells in a greased 9x13 inch baking dish with the openings facing up.

          Add the Marinara Sauce: Evenly pour the marinara sauce over the stuffed shells, ensuring they are fully covered. To create a beautifully cheesy top, sprinkle additional mozzarella cheese over the sauce.
