4 large bell peppers (any color)

1 cup quinoa, rinsed thoroughly

2 cups chicken or vegetable broth

1 lb ground turkey

1 medium onion, diced into small pieces

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

Salt and pepper to taste

1 can (14 oz) black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 cup diced tomatoes (canned or fresh)

1 ½ cups shredded cheese (cheddar or a blend)

Fresh cilantro for garnish (optional)

Prepare the Quinoa: In a medium saucepan, combine the rinsed quinoa and chicken or vegetable broth. Bring this mixture to a boil over medium-high heat, then reduce the heat to low. Cover the pot with a lid and let it simmer for approximately 15 minutes, or until the quinoa is tender and all the liquid has been absorbed. Once ready, remove from heat and set aside to cool.

    Preheat and Prepare the Peppers: Preheat your oven to 375°F (190°C). While the oven is heating, cut the tops off the bell peppers and carefully remove the seeds and membranes. Lightly brush the exterior of each pepper with olive oil and arrange them in a baking dish, ensuring they are standing upright with the cut sides facing up.

      Cook the Turkey Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the diced onion until it becomes translucent, which should take about 3-4 minutes. Add the minced garlic and continue cooking for an additional minute until fragrant. Introduce the ground turkey to the skillet, breaking it apart with a spoon as it cooks. Brown the turkey thoroughly, about 5-7 minutes.
