Ingredients

4 large bell peppers (any color you prefer)

1 pound ground turkey

2 cups fresh spinach, roughly chopped

1 cup cooked quinoa (or substitute with rice)

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper to taste

1 tablespoon olive oil

1 cup marinara sauce (for topping)

Fresh basil leaves (for garnishing, optional)

Instructions

Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully slice the tops off the bell peppers and remove the seeds and membranes. Set the hollowed peppers aside in a baking dish, standing upright.

Cook the Filling: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and minced garlic. Sauté for approximately 3-4 minutes until the onion is soft and translucent.

Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook, stirring occasionally, for about 5-7 minutes, or until the turkey is browned and fully cooked. Season the mixture with Italian seasoning, red pepper flakes (if using), salt, and pepper to taste.

Combine Ingredients: Stir in the chopped spinach until it begins to wilt, then add the cooked quinoa and 3/4 cup of the shredded mozzarella cheese, along with the grated Parmesan cheese. Mix everything thoroughly until well combined and the spinach is wilted down.

Stuff the Peppers: Generously spoon the turkey and spinach mixture into each prepared bell pepper, packing it tightly. Ensure to fill them right to the top.

Add Marinara Sauce: Pour marinara sauce over the tops of each stuffed pepper for added moisture and flavor. Then, sprinkle the remaining shredded mozzarella cheese evenly over the sauce layer.

Bake: Cover the baking dish with aluminum foil to retain moisture and bake in the preheated oven for 25 minutes. Afterward, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

Serve: Once out of the oven, allow the stuffed peppers to cool for a few minutes. If desired, garnish with fresh basil leaves for a pop of color and flavor. Serve warm and enjoy your delightful cheesy turkey and spinach stuffed peppers!
