1 lb ground turkey

1 cup whole wheat breadcrumbs

1 large egg

½ cup freshly grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp dried Italian herbs blend (oregano, basil, thyme)

Salt and freshly ground black pepper, to taste

2 medium zucchinis, spiralized (approximately 2 cups)

1 cup marinara sauce (your choice, store-bought or homemade)

1 cup shredded mozzarella cheese

2 tbsp extra virgin olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven:

    Begin by preheating your oven to 400°F (200°C).

      Prepare the Meatball Mixture:

        In a large mixing bowl, combine the ground turkey, whole wheat breadcrumbs, egg, grated Parmesan cheese, garlic powder, onion powder, dried Italian herbs, and a pinch of salt and pepper. Use your hands or a spatula to mix everything together until just blended, taking care not to overmix to ensure tender meatballs.

          Shape the Meatballs:

            With your hands, portion out the mixture and roll it into medium-sized meatballs, roughly 1 inch in diameter. You should be able to form approximately 20 meatballs.

              Sear the Meatballs:

                In an oven-safe skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Once the oil is shimmering, add the meatballs in a single layer (you may need to do this in batches to avoid overcrowding). Sear the meatballs for about 5-7 minutes, turning them occasionally until they develop a golden-brown crust on all sides.

                  Add the Marinara Sauce:

                    Carefully pour your marinara sauce over the seared meatballs, making sure to coat them evenly. Then, sprinkle the shredded mozzarella cheese generously on top of the meatballs and sauce.

                                In a separate non-stick skillet, add a splash of olive oil over medium heat. Sauté the zoodles for about 3-5 minutes, just until they become tender yet slightly crisp. Season with salt and pepper to taste, then promptly remove from heat to prevent overcooking.

                                  Combine Deliciousness:

                                    Once the meatballs are ready, carefully take the skillet out of the oven. Gently place the cooked zoodles around and on top of the meatballs, allowing them to mingle with the marinara sauce.
