Ingredients

1 cup (2 sticks) unsalted butter, melted

1 cup packed brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons pure vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon fine salt

1 cup butterscotch chips

1/2 cup chopped pecans (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking pan by greasing it lightly with butter or cooking spray, or line it with parchment paper for easier removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter with packed brown sugar and granulated sugar. Using a whisk, mix vigorously until the mixture becomes smooth and homogenous, approximately 1 minute.

Add Eggs and Vanilla: Incorporate the eggs one by one into the butter-sugar mixture. Whisk after each addition until the eggs are fully incorporated. Next, add the vanilla extract and stir to combine.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and fine salt. This ensures even distribution of the leavening agents and prevents clumping.

Mix Dry into Wet: Carefully fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until combined; it’s perfectly fine if the batter retains some small lumps.

Fold in Butterscotch Chips and Nuts: Gently fold in the butterscotch chips and, if desired, the chopped pecans, ensuring they are evenly dispersed throughout the batter.

Spread into Pan: Pour the blondie batter into your prepared baking pan. Use a spatula to spread the batter evenly into the corners of the pan.

Bake: Place the baking pan in the preheated oven and bake for 20-25 minutes. The blondies are done when the edges are lightly golden-brown, and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Slice: After baking, remove the pan from the oven and let it cool on a wire rack for about 10-15 minutes. If lined with parchment paper, carefully lift the blondies out of the pan and place them on a cutting board. Slice into squares or rectangles.

Serve and Enjoy: These rich and chewy blondies can be served warm or at room temperature. They are especially delightful when paired with a scoop of creamy vanilla ice cream or drizzled with luscious chocolate sauce!
