2 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

2 cloves garlic, minced

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch cubes

1 yellow bell pepper, cut into 1-inch cubes

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1/2 red onion, finely chopped

1 jalapeño, deseeded and diced (optional, for added heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Add the chicken cubes to the marinade, making sure they are thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, or up to 4 hours for enhanced flavor.

    Prepare the Pineapple Salsa: In another bowl, combine the diced pineapple, finely chopped red onion, jalapeño (if you prefer a spicy kick), and chopped cilantro.
