Ingredients
  

1 cup orzo pasta

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon (approximately 3 tablespoons)

1 teaspoon honey or agave syrup

1/4 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper (any color), diced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Lemon wedges for garnish

Instructions
 

Cook the Orzo: Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil. Once boiling, add the orzo pasta and cook per the package instructions until al dente. Drain the pasta and rinse it under cold running water to halt the cooking process. Set the orzo aside to cool completely.

    Prepare the Dressing: In a small mixing bowl, whisk together the olive oil, lemon zest, lemon juice, honey (or agave syrup), sea salt, and black pepper until the mixture is well combined and emulsified.

      Combine Ingredients: In a large mixing bowl, add the cooled orzo, halved cherry tomatoes, diced cucumber, bell pepper, and finely chopped red onion. Drizzle the prepared dressing over the salad and gently toss everything together until all ingredients are evenly coated with the dressing.

        Add Cheese and Fresh Herbs: If using, carefully fold in the crumbled feta cheese. Sprinkle in the freshly chopped parsley and mint, and lightly toss again to incorporate. Taste the salad and adjust the seasoning with more salt or pepper, if necessary.
