6 fresh ears of corn, husked and cleaned

2 tablespoons olive oil

2 teaspoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 tablespoon lime zest (from about 1 lime)

2 tablespoons fresh lime juice (from about 1-2 limes)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup crumbled Cotija cheese (or substitute with feta cheese)

1/4 cup fresh cilantro, finely chopped (for garnish)
