Chipotle Turkey & Avocado Burrito Bake

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup cooked brown rice

1 cup corn kernels (fresh, canned, or frozen)

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1-2 tablespoons chipotle chili powder (adjust to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1/2 cup shredded cheese (options: cheddar or Mexican blend)

2 large ripe avocados, diced

4 large flour tortillas

1 cup salsa (for topping)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.

    Cook the Turkey: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Incorporate the minced garlic followed by the ground turkey. Cook and stir until the turkey is browned throughout, breaking it into small pieces with a spatula as it cooks.

      Add Flavor: Once the turkey is cooked, add the black beans, brown rice, corn, diced tomatoes, chipotle chili powder, cumin, smoked paprika, and season with salt and pepper. Stir well and let it cook for an additional 5 minutes to meld the flavors together. Remove from heat and allow to cool slightly.

        Prepare the Tortilla Base: In a 9x13-inch baking dish, lay two tortillas side by side. If necessary, trim the tortillas to fit snugly in the dish. Scoop half of the turkey mixture onto the tortillas, spreading it evenly across the surface.

          Layer Avocados and Cheese: Distribute half of the diced avocados over the turkey mixture, followed by half of the shredded cheese. Place another layer of two tortillas on top of this filling.

            Add the Remaining Filling: Spread the remaining turkey mixture over the second layer of tortillas. Top this layer with the remaining diced avocados and the remaining shredded cheese.

              Bake: Pour the salsa evenly over the top of the burrito bake, adding extra salsa if you prefer a saucier dish. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
