Ingredients

1 cup dark chocolate (minimum 70% cocoa), finely chopped

1/4 cup unsalted butter, cut into pieces

3 large eggs, separated into yolks and whites

1/3 cup granulated sugar, divided

1 teaspoon pure vanilla extract

1/4 teaspoon fine sea salt

1 cup heavy cream, chilled

1/2 cup hazelnut spread (such as Nutella)

1/2 cup hazelnuts, chopped and toasted (for garnish)

Fresh berries (such as raspberries or strawberries, for garnish, optional)

Instructions

Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and pieces of unsalted butter. Set this bowl over a saucepan filled with gently simmering water, ensuring the bottom of the bowl doesn’t touch the water. Stir frequently until the mixture is melted and smooth. Remove from heat and allow it to cool slightly.

Prepare the Egg Yolks: In a separate mixing bowl, whisk the egg yolks with half of the granulated sugar (about 2 tablespoons) and the vanilla extract. Continue whisking until the mixture is pale in color and creamy in texture.

Incorporate Chocolate: Pour the melted chocolate mixture into the egg yolk mixture, stirring gently until fully combined and there are no streaks of chocolate.

Beat the Egg Whites: In a clean mixing bowl, use an electric mixer to beat the egg whites along with the sea salt. Beat until soft peaks form. Gradually add the remaining granulated sugar, continuing to beat until the mixture achieves stiff peaks (the egg whites should stand upright when the beaters are lifted).

Whip the Cream: In another mixing bowl, whisk the chilled heavy cream until it reaches soft peaks. The cream should be smooth and thick but not yet firm.

Fold the Mixtures: Carefully fold the whipped cream into the chocolate mixture in three additions. Then, gently fold in the beaten egg whites one-third at a time. Be cautious to keep as much air in the mixture as possible for a light and airy mousse.

Incorporate Hazelnut Spread: Finally, fold in the hazelnut spread. Mix only until you see a beautiful marbling effect, keeping some of the hazelnut spread distinct from the chocolate.

Chill the Mousse: Spoon the mousse mixture into individual dessert cups or glasses. Cover each with plastic wrap and refrigerate for at least 2 hours, or until the mousse has set to a light, fluffy consistency.

Garnish and Serve: Once chilled and set, garnish each mousse cup with a sprinkle of toasted hazelnuts and a few fresh berries if desired. Serve immediately and enjoy the indulgent, creamy delight of your chocolate hazelnut mousse cups!
