1 ½ cups grated zucchini (approximately 1 medium zucchini)

1 cup all-purpose flour

½ cup whole wheat flour

½ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

2 large eggs

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips (divided)

½ teaspoon ground cinnamon (optional)

¼ cup chopped walnuts (optional, for added crunch)

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x5 inch loaf pan by greasing it or lining it with parchment paper to ensure easy removal after baking.

    Prepare Zucchini: Grate the zucchini using a box grater or food processor. To remove excess moisture, place the grated zucchini in a clean kitchen towel or cheesecloth, twist it, and squeeze out the liquid. Set the drained zucchini aside for later use.

      Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and if desired, ground cinnamon. Whisk thoroughly until all ingredients are evenly combined.

        Combine Wet Ingredients: In a separate bowl, beat the eggs using a whisk or electric mixer until frothy. Add in the granulated sugar, packed brown sugar, oil, and vanilla extract. Mix well until the mixture is smooth and fully incorporated.

          Combine Mixtures: Gradually fold the dry ingredient mixture into the wet ingredients, stirring until just combined. Be careful not to overmix! Gently fold in the drained zucchini and ¾ cup of the chocolate chips, and if desired, the chopped walnuts.

                Bake: Place the loaf pan in your preheated oven and bake for 55 to 65 minutes. Check for doneness by inserting a toothpick into the center; it should emerge with a few moist crumbs but not wet batter.

                  Cool Down: Once baked, allow the zucchini bread to cool in the pan for about 10-15 minutes. After that, transfer it to a wire rack to cool completely before slicing into generous pieces.
