Ingredients

2 ripe bananas, well-mashed

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon (plus extra for coating)

1/4 cup milk (or your preferred dairy-free alternative)

1 large egg, beaten

1/4 cup unsalted butter, melted (or substitute with coconut oil)

1/2 cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a donut pan by lightly greasing it with non-stick spray or butter to ensure easy removal of the donuts later.

Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon. Whisk them together until evenly distributed and set the mixture aside.

Combine Wet Ingredients: In a separate bowl, start by smashing your ripe bananas until smooth. Then, add the granulated sugar, milk, beaten egg, and melted butter. Mix these ingredients thoroughly until you achieve a smooth and unified mixture.

Combine Mixtures: Gradually add the dry ingredients into the wet mixture. Stir gently until just combined; it's perfectly fine if the batter has a few small lumps—avoid over-mixing as this could lead to dense donuts.

Fill the Donut Pan: Transfer the batter into a piping bag or a zip-top bag with one corner snipped off. Carefully fill each donut cavity in the pan about two-thirds full to allow space for rising.

Bake the Donuts: Place the filled donut pan in your preheated oven. Bake for approximately 10 to 12 minutes, or until a toothpick inserted into the center of a donut comes out clean.

Prepare Cinnamon Sugar Coating: While the donuts are baking, combine the remaining 1/2 cup of granulated sugar and 2 teaspoons of ground cinnamon in a shallow bowl. Mix well and set aside for coating the donuts.

Cool and Remove: After baking, let the donuts cool in the pan for about 5 minutes. Carefully remove them from the pan and transfer them to a wire rack to cool slightly.

Coat in Cinnamon Sugar: While the donuts are still warm, roll each one in the cinnamon-sugar mixture until they are generously coated.

Serve: Allow the donuts to cool completely on the wire rack. Serve them fresh alongside a hot cup of coffee or tea for a delightful treat!
