Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon salt

½ teaspoon ground cinnamon

1 large egg

¾ cup whole milk

⅓ cup unsalted butter, melted

1 teaspoon vanilla extract

½ cup granulated sugar (for coating)

2 teaspoons ground cinnamon (for coating)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by either greasing it lightly with cooking spray or lining it with muffin liners for easy removal.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, ½ cup of granulated sugar, baking powder, salt, and ½ teaspoon of ground cinnamon. Ensure all dry ingredients are well combined to avoid lumps in your batter.

Combine Wet Ingredients: In a separate medium bowl, crack the large egg and whisk it until it's frothy. Add the whole milk, melted unsalted butter, and 1 teaspoon of vanilla extract. Mix until the mixture is smooth and homogenous.

Combine Wet and Dry: Gently pour the wet ingredients into the bowl containing the dry ingredients. Using a spatula, fold the mixture together until just combined. Be careful not to overmix; it's okay if the batter remains slightly lumpy for a soft muffin texture.

Fill Muffin Tin: Using a scoop or spoon, evenly distribute the batter into your prepared muffin cups, filling each about ¾ full to allow room for rising during baking.

Bake: Place the muffin tin in your preheated oven and bake for 15 to 18 minutes. The muffins are ready when a toothpick inserted into the center comes out clean and the tops have turned a lovely golden brown.

Prepare Cinnamon Sugar Coating: While your muffins are baking, create the coating by mixing ½ cup of granulated sugar with 2 teaspoons of ground cinnamon in a small bowl. Stir until thoroughly combined.

Coat Muffins: Once the muffins are baked, let them cool in the pan for about 5 minutes. After cooling slightly, gently remove the muffins and roll each one in the cinnamon sugar mixture until they are completely coated.

Serve: These delightful muffins can be enjoyed warm or at room temperature. For the best experience, savor them fresh out of the oven!
