1 ½ pounds ground beef (preferably 80/20 for optimal juiciness)

1 large egg

1 cup plain or Italian-style breadcrumbs

½ cup milk

1 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon ketchup (plus an additional tablespoon for topping)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional for a smoky flavor)

For the Mashed Potatoes:

2 pounds Russet potatoes, peeled and cut into quarters

½ cup heavy cream

4 tablespoons unsalted butter

Salt and pepper, to taste

Fresh chives or parsley for garnish (optional)

For the Gravy:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups beef broth

1 teaspoon soy sauce

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Set your oven temperature to 350°F (175°C) to prepare for baking the meatloaf.

    Prepare the Meatloaf:

      - In a large mixing bowl, blend together the ground beef, egg, breadcrumbs, milk, finely chopped onion, minced garlic, Worcestershire sauce, Dijon mustard, ketchup, oregano, salt, black pepper, and smoked paprika if desired. Stir the mixture gently until all ingredients are well incorporated, being cautious not to overmix to keep the meatloaf tender.

        - Spoon the meat mixture into a loaf pan, shaping it gently into a loaf form. For a touch of sweetness, brush the top with the extra ketchup.

          Bake the Meatloaf:

              Prepare the Mashed Potatoes:

                  - Drain the potatoes and return them to the pot. Add in the heavy cream, unsalted butter, and season with salt and pepper. Mash the potatoes until they are smooth and creamy, adjusting the seasoning to your liking. Keep the mashed potatoes warm until you're ready to serve.

                    Make the Gravy:

                      - In a medium saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the flour continuously for about 2 minutes to create a roux.

                        - Gradually pour in the beef broth while whisking vigorously to avoid any lumps. Stir in soy sauce, and continue to cook the gravy until it thickens, approximately 3-5 minutes. Taste and season with additional salt and pepper if needed.

                          Serve:

                            - Slice the delicious meatloaf into thick pieces and serve while hot, alongside a generous helping of creamy mashed potatoes. Drizzle the warm, savory gravy over both the meatloaf and mashed potatoes. For a pop of color and freshness, garnish with freshly chopped chives or parsley, if desired.
