10 oz whole wheat pasta (fusilli or penne)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/3 cup feta cheese, crumbled

1/4 cup red onion, finely diced

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

1 tsp garlic powder

Salt and black pepper, to taste

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the whole wheat pasta to the pot and cook according to the package instructions until it reaches 'al dente' — tender but still firm to the bite. Once cooked, drain the pasta in a colander and rinse it under cold running water to halt the cooking process. Set the pasta aside and allow it to cool completely.

    Prepare the Vegetables: While the pasta cools, take the time to prepare your fresh vegetables. Cut the cherry tomatoes in half, dice the cucumber and red bell pepper into bite-sized pieces, slice the black olives, and finely chop the red onion and fresh parsley.

      Make the Dressing: In a small bowl, combine the extra virgin olive oil, red wine vinegar, dried oregano, garlic powder, and a pinch of salt and black pepper. Whisk together vigorously until the mixture is well-blended and emulsified.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta with the halved cherry tomatoes, diced cucumber, red bell pepper, sliced olives, finely chopped red onion, crumbled feta cheese, and fresh parsley.
