Ingredients

2 cups rotini pasta

2 cups cooked chicken breast, shredded (about 2-3 chicken breasts)

1 cup cherry tomatoes, halved

1 cup black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 small red bell pepper, diced

1 small green bell pepper, diced

1/2 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheddar cheese

1/4 cup olive oil

2 tablespoons lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot, bring water to a rolling boil and add a generous amount of salt. Add the rotini pasta and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool completely.

Prepare the Chicken: If the chicken breasts are not already cooked, you can either boil them in water or grill them until fully cooked through (internal temperature should reach 165°F / 74°C). Remove from heat and allow to cool slightly before shredding the chicken into bite-sized pieces using two forks or your hands.

Combine the Ingredients: In a large mixing bowl, gently combine the cooked rotini pasta, shredded chicken, halved cherry tomatoes, black beans, corn, diced red bell pepper, diced green bell pepper, finely chopped red onion, and chopped cilantro. Toss the mixture carefully to ensure even distribution of all ingredients.

Prepare the Dressing: In a small mixing bowl or jar, whisk together the olive oil, fresh lime juice, chili powder, ground cumin, and a pinch of salt and pepper. Mix until all ingredients are well incorporated and the dressing is smooth.

Dress the Salad: Pour the dressing over the pasta salad mixture. Toss gently to coat all ingredients evenly with the dressing, ensuring that every bite is flavorful.

Incorporate Avocado and Cheese: Carefully fold in the diced avocado and shredded cheddar cheese with a gentle hand, being mindful not to mash the avocado pieces too much.

Chill the Salad: Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Allow the salad to chill for at least 30 minutes to let all the flavors meld beautifully together.

Serve and Enjoy: Before serving, give the salad a final toss to redistribute the ingredients. Scoop the salad into bowls, and enjoy the cool and zesty flavors of your Southwest Chicken Pasta Salad!
