8 oz (225g) spaghetti

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, finely chopped (any color)

1 cup black olives, sliced

1/2 cup red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/3 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

8 small cups or bowls for serving

Instructions
 

Cook the Spaghetti: Fill a large pot with water and bring it to a rolling boil. Add a generous pinch of salt. Once boiling, add the spaghetti and cook according to the package instructions until al dente. Drain the pasta and rinse it under cold water to halt the cooking process. Set aside to cool completely.

    Prepare the Salad Components: While the spaghetti is cooling, take a large mixing bowl and combine the halved cherry tomatoes, diced cucumber, finely chopped bell pepper, sliced black olives, finely chopped red onion, crumbled feta cheese, chopped fresh basil, and chopped parsley. Gently mix these ingredients until they are well distributed.
