Ingredients

For the Hot Dogs:

4 beef or pork hot dog sausages

4 soft hot dog buns

1 cup coleslaw (store-bought or homemade)

1 ripe avocado, sliced

½ cup crushed potato chips (for topping)

¼ cup mayonnaise

1 tablespoon ketchup

1 tablespoon yellow mustard

1 tablespoon fresh lime juice

Salt and freshly cracked pepper, to taste

For the Caramelized Pineapple:

1 medium ripe pineapple, peeled, cored, and sliced into rings

2 tablespoons brown sugar

1 tablespoon unsalted butter

1 teaspoon ground cinnamon

A pinch of salt

Instructions

Prepare the Caramelized Pineapple:

    - Heat a large skillet over medium heat and add the unsalted butter. Once melted, sprinkle in the brown sugar, ground cinnamon, and a pinch of salt. Stir the mixture until it is smooth and begins to bubble.

      - Carefully add the pineapple rings to the skillet. Cook each side for about 3-4 minutes, or until the rings are beautifully golden brown and caramelized. Once done, remove from heat and set aside to cool slightly.

        Cook the Hot Dogs:

          - While the pineapple is caramelizing, preheat your grill or stovetop grill pan to medium-high heat.

            - Place the hot dog sausages on the grill and cook for approximately 5-7 minutes, turning them every couple of minutes so they cook evenly and develop appealing grill marks.

              Prepare the Toppings:

                - In a small mixing bowl, combine the mayonnaise, ketchup, yellow mustard, and fresh lime juice. Whisk together until smooth and creamy. Season lightly with salt and freshly cracked pepper to enhance the flavors. This sauce will elevate your hot dogs.

                  Assemble the Hot Dogs:

                    - Take each hot dog bun and place a grilled sausage inside. Top generously with coleslaw, sliced avocado, and a few pieces of the caramelized pineapple. Drizzle the prepared sauce over the top and finish with a sprinkling of crushed potato chips for an irresistible crunch.

                      Serve:

                        - Serve the hot dogs immediately while they’re warm. Optional garnishes include extra wedges of lime and your favorite hot sauce for an added kick.
