Comforting One-Pot Chicken & Bean Chili

1 lb (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed well

1 can (15 oz) pinto beans, drained and rinsed well

1 medium onion, finely diced

3 cloves garlic, minced

1 bell pepper (choose red or green for color), diced

1 can (14.5 oz) diced tomatoes with green chilies

1 cup low-sodium chicken broth

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Optional toppings: diced avocado, shredded cheese, sour cream
