Ingredients

2 pounds boneless, skinless chicken breasts

3 cups heavy cream

1 cup chicken broth

1 cup freshly grated Parmesan cheese

4 cloves garlic, finely minced

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon freshly cracked black pepper

1 cup uncooked fettuccine pasta

2 tablespoons fresh parsley, finely chopped (for garnish)

Optional: additional grated cheese for serving

Instructions

Prepare the Chicken: Start by placing the boneless, skinless chicken breasts at the bottom of your slow cooker. Generously season both sides with salt, black pepper, and the Italian seasoning to enhance the flavor.

Add the Aromatics: Sprinkle the minced garlic evenly over the seasoned chicken breasts, infusing the dish with a delightful aroma.

Combine the Base: In a separate mixing bowl, whisk together the heavy cream and chicken broth until thoroughly blended. Once combined, pour this creamy mixture over the chicken in the slow cooker, ensuring the chicken is well-submerged.

Cook: Cover the slow cooker with its lid. Set to low and cook for 4-5 hours, or on high for 2-3 hours, until the chicken is tender and has reached an internal temperature of 165°F.

Shred the Chicken: Carefully remove the cooked chicken breasts from the slow cooker using tongs. Transfer them to a cutting board and shred the chicken using two forks. Return the shredded chicken to the slow cooker, mixing it well with the creamy sauce.

Cook the Pasta: Stir in the uncooked fettuccine pasta to the creamy chicken mixture in the slow cooker. Again, cover and cook on low for an additional 30-45 minutes, or until the pasta is cooked to al dente. Stir occasionally to ensure the pasta cooks evenly and does not stick together.

Finish the Sauce: Once the pasta is cooked, stir in the freshly grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. Taste and adjust the seasoning with extra salt or pepper if needed.

Serve: Ladle the rich and creamy chicken Alfredo into individual bowls. Garnish with a sprinkle of freshly chopped parsley for a pop of color and serve with additional grated cheese on the side if desired.
