Creamy Avocado Pasta

12 oz pasta (spaghetti or fettuccine are ideal choices)

2 ripe avocados, halved and pitted

2 cloves garlic, finely minced

1/4 cup fresh basil leaves

2 tablespoons fresh lemon juice

1/4 cup extra-virgin olive oil

1/4 cup grated Parmesan cheese (plus extra for garnishing)

Salt and freshly ground black pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a touch of heat)

1 cup cherry tomatoes, halved (for garnish)

1/4 cup pine nuts or walnuts, toasted (for garnish)

Instructions
 

Cook the Pasta: Start by boiling a large pot of salted water over high heat. Once the water is at a rolling boil, add the pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. Just before draining, reserve about 1 cup of the pasta water to adjust the sauce's consistency later. Drain the pasta and set it aside in a large mixing bowl.

    Prepare the Avocado Sauce: In a blender or food processor, combine the halved avocados, minced garlic, fresh basil, lemon juice, and olive oil. Blend on high speed until the mixture is velvety smooth and creamy. If needed, scrape down the sides of the blender to ensure an even blend.

      Mix in Cheese and Season: Add the freshly grated Parmesan cheese to the avocado mixture. Blend on low speed until the cheese is fully incorporated. If you find the sauce too thick, gradually add some of the reserved pasta water, a few tablespoons at a time, until you achieve your desired creamy consistency. Season the sauce with salt, freshly ground black pepper, and red pepper flakes (if using), and blend briefly to combine.

        Combine Pasta and Sauce: Pour the creamy avocado sauce over the cooked and drained pasta in the large mixing bowl. Use tongs or a large spoon to gently toss the pasta with the sauce, ensuring that every strand is thoroughly coated.
