Creamy Avocado Tuna Wraps

1 ripe avocado, peeled and pitted

1 can (5 oz) tuna in water, drained

2 tablespoons plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and black pepper to taste

1/4 cup finely chopped red onion

1/4 cup diced cucumber

1/4 cup sweet corn (canned or cooked)

2 whole wheat tortillas or wraps

Handful of fresh spinach or mixed greens

Optional: sliced radishes and black olives for garnish

Instructions
 

In a medium mixing bowl, use a fork to mash the ripe avocado until it reaches a smooth consistency with minimal lumps.

    Add the drained tuna to the mashed avocado, followed by the Greek yogurt, Dijon mustard, and fresh lemon juice. Stir with a spatula or fork until the mixture is creamy and well combined.

      Season the mixture generously with salt and black pepper to your taste preferences; mix again to incorporate the seasoning.

        Gently fold in the finely chopped red onion, diced cucumber, and sweet corn until all the ingredients are uniformly distributed throughout the mixture.

          Take the whole wheat tortillas and lay them flat on a clean, dry surface. In the center of each tortilla, place a handful of fresh spinach or mixed greens to create a bed for the filling.

            Evenly spoon the creamy avocado tuna mixture over the greens, spreading it out to cover the tortillas generously but leaving a small border around the edges.
