12 oz (340g) fettuccine or penne pasta

1 lb (450g) ground turkey

2 tbsp Cajun seasoning

1 tbsp olive oil

1 medium onion, finely diced

3 cloves garlic, minced

1 red bell pepper, finely diced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

1 cup fresh spinach, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Instructions
 

Cook the Pasta:

    In a large pot, bring salted water to a rolling boil. Carefully add the fettuccine or penne and cook according to the package instructions until al dente—usually around 8-10 minutes. Drain the pasta and set aside in a colander.
