1 tablespoon Dijon mustard

1 cup heavy cream

1 cup assorted charcuterie meats (such as salami, prosciutto, and chorizo), chopped

1 cup assorted cheeses (like Gruyère, cheddar, and blue cheese), shredded

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing for about 3-4 minutes until the onion becomes translucent and fragrant.

    Add Vegetables: Stir in the diced carrots and celery. Continue to cook for an additional 5 minutes, allowing the vegetables to soften and develop flavor.

      Incorporate Potatoes: Add the diced potatoes to the pot, followed by the chicken or vegetable broth, dried thyme, and bay leaf. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Cover the pot and let it cook for approximately 15-20 minutes, or until the potatoes are tender when pierced with a fork.
