Ingredients

1 medium head of cauliflower (approximately 2-3 pounds), cut into florets

4 tablespoons unsalted butter

1 cup sharp cheddar cheese, finely grated

1/4 cup cream cheese, softened to room temperature

1/2 cup milk (adjust more or less for desired consistency)

1 clove garlic, finely minced

Salt and freshly ground black pepper to taste

Fresh chives or parsley, finely chopped (for garnish)

Instructions

Prepare the Cauliflower: In a large pot, fill with water and bring it to a rolling boil, adding a generous amount of salt. Once boiling, add the cauliflower florets and cook for about 10-12 minutes, or until they become tender enough to pierce with a fork. Once cooked, carefully drain and set aside.

Sauté the Garlic: In the same pot (after draining), reduce the heat to medium and add the butter, allowing it to melt. Once melted, add the minced garlic, sautéing for about 1-2 minutes until fragrant, taking care to avoid burning the garlic.

Mash the Cauliflower: Return the drained cauliflower florets to the pot with the melted garlic butter. Using a potato masher or an immersion blender, mash the cauliflower until you achieve your desired texture. For an exceptionally smooth consistency, the immersion blender is recommended.

Add Creamy Ingredients: Introduce the softened cream cheese to the mashed cauliflower, stirring until well incorporated. Gradually pour in the milk while mixing, adjusting to reach your preferred creamy consistency—add more milk if necessary for a lighter texture.

Incorporate Cheddar: Gently mix in the grated sharp cheddar cheese, stirring until it melts and fully combines with the cauliflower mixture. Season with salt and freshly ground black pepper to taste, ensuring the flavors are well balanced.

Serve: Transfer the creamy cheddar cauliflower mash to a serving bowl. For a vibrant finish, garnish with finely chopped fresh chives or parsley, adding a touch of color and freshness.

Enjoy: Serve warm as a comforting side dish alongside your favorite proteins—this mash is sure to be a hit!
