1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

3 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved (optional, for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the bite-sized chicken pieces, seasoning them liberally with salt and pepper. Cook the chicken for about 5-7 minutes, stirring occasionally, until they are nicely browned and cooked through. Once done, remove the chicken from the skillet and set aside on a plate.

    Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Incorporate the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes translucent. Next, add the minced garlic, continuing to sauté for an additional 1-2 minutes until the garlic is fragrant.

      Cook the Broccoli: Introduce the broccoli florets to the skillet, followed by pouring in the chicken broth. Cover the skillet with a lid and allow it to simmer for 3-5 minutes. This will help cook the broccoli until it is tender yet still crisp for a delightful texture.

        Make it Creamy: Lower the heat to low and return the cooked chicken to the skillet. Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning.
