1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup low-sodium chicken broth

1 cup fresh spinach leaves

2 tablespoons extra virgin olive oil

1 teaspoon dried thyme

1 teaspoon dried Italian seasoning blend

Salt and freshly cracked black pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, finely chopped (for garnish)

Instructions
 

Sauté the Chicken:

    - In a large skillet, heat the olive oil over medium-high heat.

      - Add the bite-sized chicken pieces to the skillet, seasoning generously with salt, black pepper, dried thyme, and Italian seasoning.
