Ingredients

12 oz (340g) penne pasta

1 tablespoon olive oil

1 pound (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

3 cloves garlic, minced

1 medium onion, finely chopped

1 teaspoon dried Italian herbs (a mix of oregano, basil, and thyme)

1 teaspoon red pepper flakes (optional, for added heat)

4 cups fresh spinach, roughly chopped

1 cup (240ml) heavy cream

1 cup (240ml) chicken broth or stock

1 cup (100g) grated Parmesan cheese, plus extra for topping

1 cup (100g) shredded mozzarella cheese

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to prepare for baking.

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta and set it aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through.

Add Aromatics: Next, add the minced garlic and finely chopped onion to the skillet. Sauté for approximately 2-3 minutes or until the onion becomes translucent and fragrant.

Season the Mixture: Stir in the dried Italian herbs and optional red pepper flakes for a touch of spice. Then, add the chopped spinach to the skillet, cooking until it wilts down, which should take about 3-4 minutes.

Create the Creamy Sauce: Pour in the heavy cream and chicken broth, stirring everything together. Bring the mixture to a gentle simmer, then add the grated Parmesan cheese. Stir continuously until the cheese is melted and the sauce looks creamy. Adjust the flavor with salt and pepper to your preference.

Combine: In a large mixing bowl, combine the cooked penne pasta with the creamy chicken and spinach sauce. Toss gently until the pasta is thoroughly coated with the sauce.

Transfer to Baking Dish: Pour the pasta mixture into a greased 3-quart baking dish. Evenly sprinkle the shredded mozzarella cheese and additional Parmesan cheese over the top.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top turns golden brown and the dish is bubbling.

Garnish and Serve: After baking, remove the dish from the oven and let it sit for a few minutes to cool slightly. Garnish with freshly chopped parsley before serving to add a pop of color. Enjoy your delicious Creamy Chicken and Spinach Pasta Bake!
